I wouldn't drill and tap your exhaust manifold for an EGT probe. If some of the probe were to break off it would go through the turbo impeller on the hot side and destroy it. Just drill a hole in the exhaust pipe 2 or 3 inches behind the turbo and weld on a bung for the probe to screw into.

Your EGT's are likely getting out of hand because your demandate program is terrible.
