Your fan will kick on at 210° coolant temp and that is perfectly normal. It will do this when idling, pulling a hill and anytime there isn't enough air flowing over the engine to cool itself. This is the way they are designed to work. If ever see it continue to climb past 210 and the fan doesn't kick on or the fan kicks on and still climbs past 210 (unless working the hell out of a heavy load on a steep hill, this may cause it to go slightly past 210 but the fan should bring the temp down) then you have a problem. Till then absolutely nothing to worry about.
