It could be anything from wrong bearings installed to worn cam bearings or even a cracked rocker shaft from not being installed or removed properly. You have to pull the oil pump to swap the number 1 main bearings, I’m just speculating here but if it’s slightly higher when the truck is down hill the pickup tubes could be sucking air and when you are down hill they are covered with oil. Just a thought and something you could check.
