Only time I ever see the ISX's get that high oil temps is when someone has jacked with the programming or the other things I mentioned above. Are the coolant temps getting 230+ as well? Is that thing in a motor-home or some other equipment where air flow is severely restricted?.. and the thing cannot breathe well? was it rebuilt with all OEM parts?... or was the whole engine from cummins new? If that oil temp is hitting 240+f then that is a serious concern. What is the boost levels doing and what are the EGT's when it gets that hot?.
