2018 Kenworth t880 intermittent low coolant light comes on

Good evening y'all, I wanted to post to see if anyone has any guidance for me on this truck.
It is intermittently throwing the low coolant warning and on insight it shows the codes for coolant data valid but below normal. Two new tanks have been installed, two new sensors, new pigtail, overlayed wires along with new pin in the ecm connector. I'm not sure what else to do and it's driving me crazy! Any advice would be appreciated. Yes the tanks that were installed were paccar tanks from my local Kenworth.
